You can use any type of fish fillets for this recipe.

Asparagus and country fried potatoes with onions makes  great sides dishes with fish.

Catfish Surprise Recipe

Ingredients for 4

Heat oven to 375 degrees.

6 medium to large catfish filets (or enough to feed your family)
1 small can crabmeat, clams or shrimp drain and save the juice. (Better if you     can get fresh.) 
1/2 pkg. stuffing mix (3-4 cups homemade dressing)
1 pkg. instant Hollandaise Sauce
1/4 cup butter
Salt, pepper, cayenne, garlic, Cajun Seasoning or your favorite to taste.

Spray casserole dish with cooking spray.
Take stuffing mix add just enough hot water to moisten the mix, add saved juice mix well.
Place 3 seasoned fillets on bottom and cover with dressing mix.
Put the 3 remaining seasoned fillets on top. Dot it with butter.

Bake at 375 for 20-25 minutes or until fish flakes easily with a fork.

Prepare the hollandaise sauce according to pkg. directions.

Cut fish into servings and place on plates. Pour the hollandaise sauce over.

For those who don't like hollandaise sauce, Salsa is a wonderful substitute.

Sprinkle dried parsley flakes on top for color.
